Easy beef skewers, Kilcreen cheese, courgette and tomato salad & Clandeboye yoghurt

Serves 4

500g of minced beef

1 tablespoon curry powder

1 tablespoon paprika

50g of grated cheese

100g natural yoghurt

1tsp chilli sauce

8 wooden skewers soaked in cold water

2 courgette cut into ribbons using a vegetable peeler

15 cherry tomatos chopped in half

1 lemon juiced and zested

2 tablespoons of extra virgin olive oil

1 bunch of fresh herbs

Place the mince, spices and cheese into a bowl, season well and mix together. Divide the mixture into 70g portions and place each onto skewer to form a sausage shape and place into fridge for 10 mins to set. Then place on a hot bbq or grill for four minutes each side.
To make the salad, mix the courgette and tomatoes with lemon juice & zest and the olive oil. Add some more cheese, lightly chop the herbs and mix to together.
Mix the chilli sauce with the yoghurt.
Top tip: Add some chilli powder to mince for an extra kick.
